Cornbread

3 eggs

3 C. cornmeal

3 C. buttermilk

1/3 C. melted butter

1 1/2 tsp. baking soda

3/4 tsp. baking powder

1 1/2 tsp. salt

Preheat oven to 400F, grease a 9 inch cast iron skillet.

Place skillet into oven while mixing all ingredients together.

Pour batter into hot skillet. Bake for 10-15 minutes until brown.

Grits

4:1 Water to grits

Simmer on the stove top until all water has been absorbed (~45 min). Season with salt, pepper, cheese, etc. to taste.

Grits can also be cooked in the crockpot on low overnight. Stock or milk can also be substituted for water.
